San Francisco Javier Viña Corrales Pago Balbaína Fino

This dry Fino from the D.O. Jerez-Xérès-Sherry is crafted by the San Francisco Javier winery using Palomino grapes. It features a creamy texture, a round profile with savory, salty notes, and a finish reminiscent of green olives.

Key facts

  • Grape variety: Palomino
  • D.O. / Region: D.O. Jerez-Xérès-Sherry
  • Winery: San Francisco Javier
  • Soil / Altitude: Pago Balbaína
  • Ageing / Cellaring potential: 9 years in soleras and criaderas

The vineyard

The grapes are sourced from an eight-hectare plot of thirty-year-old vines located in the historic Pago Balbaína. This renowned vineyard in the Jerez region benefits from maritime influence, which imparts freshness and a distinct mineral character to the fruit.

Ideal combination

Winemaking

The wine undergoes biological aging under a veil of flor for nine years using the traditional solera and criaderas system. The extraction is carried out in spring, capturing the wine at the peak of yeast activity.

Why buy it

If you are looking for a dry Sherry with limited production, this bottle will make a sophisticated addition to your cellar. Its unctuous structure and pronounced salinity make it an excellent partner for fine dining. You can buy San Francisco Javier Viña Corrales Pago Balbaína Fino online directly from our shop to experience the true character of Jerez.

A deep, brilliant golden hay pour. The complex nose opens with intense aromatics of wet chalk, dried chamomile, and blanched almonds, intertwined with sea breeze salinity, iodine, and a distinctive, rich flor-yeast depth. On the palate, it enters with remarkable vinous substance and an above-average, full body. A powerful, savory core of green olives and dried herbs is gripped by a driving, pristine acidity. The finish is exceptionally persistent, leaving a long, elegant, and chalky-salty lick.

Had the ‘25 at the Jane and boy, did this pair well with the second lobster!!! Proper clean sherry, Fino, fun, ever so subtly salty but it adds to the fun. Full bodied, extremely dry and with yes, a long lingering finish.

Great "Fino", the driest and lightest subtype of fortified internationally known as Sherry, that I tasted at the VINOBLE wine fair, June 2026, Jerez, Spain. I won't leave many more comments because, amidst so many wines I've tasted, I no longer remember very well the qualities of this one. The label, states sulfites and 15% ABV. From a sensory standpoint, it's good. One drawback of these wines – used as aperitifs and table wines – is their excessive alcohol content, which is neither gastronomic, nor very friendly.

Very gentle Fino. Bright yellow color. The layered nose that combines bitter almond, lemon zest, sourdough, and dried sage. Saline and mild acidity of green apple on a palate. Lovely long bitter finish I like so much in Fino. Great with seared tuna.

4.0/5 A remarkable Fino displaying intense aromas of toasted almonds, fresh bread dough, chamomile and sea breeze. Bone dry and razor-sharp, yet wonderfully complex and persistent. The saline character and vibrant freshness create a uniquely gastronomic wine that shines alongside seafood, cured ham and tapas. Distinctive, authentic and unforgettable.

Learned this is made in the similar process as Sherry - portion of each new vintage is moved through barrels year after year - average age of the wine upon release is 8 years. You can tell this has spent time in oak: Caramel, almond, salt, whiskey, honey. There’s a lot going on. It’s very complex!

First glass of the exquisite wine pairing @ Magoga in Cartagena was a classic Fino, Peter Sisseck’s Bodega San Francisco Javier & its ’Viña Corrales Balbaina’ (Saca spring 2025, 15% ABV, solo Palomino), previously enjoyed on a number of occasions. Wizardly paired with Medi shrimp, ajo blanco & caviar. Mild iodine, almonds & hazelnuts, lemon, chalk & fine-threaded yeast on the nose. Tangy, midweight & mineral-driven palate joined by distinct nuttiness, sun & sea. Utterly balanced mouthfeel, salty, drying closing!

Tasted with the winemaker, pours sauterne gold with oak, saline, minerality and honeycomb. On the tongue it is salty oak, yellow apple, saline with a lean austere finish. Wonderful

Textbook fino expression, yet far from ordinary. The nose is marked by dry nuts, saline accents and a mineral backbone, all merging into a refined whole. On the palate the wine is remarkably soft and layered, avoiding harsh edges at 15% alcohol, which remains entirely hidden. A delicate bitterness introduces structure and rhythm, before the finish resolves into a clean, brisk freshness. There is an almost architectural clarity here: each element precise, balanced, and contributing to a compelling sense of elegance.

Really oxidative and sour, a bit too excessive

This 100% Palomino wine shines with a straw-yellow hue and delicate golden reflections. The nose is refined yet expressive, revealing inviting notes of almonds and fresh bread dough. On the palate, it impresses with its structured body and remarkable persistence, leading to a long, elegant finish that showcases both complexity and finesse. Its distinct character makes it a superb match for white fish and delicate charcuterie.

Blind from @[1|4057966|Robinf], what is this? This has some funky tones to it. A natural wine? Could this be a natural wine gruner veltliner? No. But what is it. Funky, but i cant quite put my finger to it. This is good though. Very enjoyable and nicely structured. It has some oxidative tones as well. This is… a Fino! Wow. Great little project of the Pingus wizard. Points. 16+

(17-/20) Blind tasted. What is this? This has age. Very floral, lots of stone fruit, some oxidative tones. Complex wine. Biological ageing tones, but not a fortified wine, so not a Sherry. Savagnin from Jura? Nope, Fino Sherry 🤦‍♂️ Medium+ intense aromas of chamomile, jasmine, yellow apple, pear, apricot, fennel, white pepper, wet stone, sea salt, yeast, toasted bread, almond. Dry wine, high acidity, medium body, pronounced flavour intensity, long finish. 15% ABV - Wine exchange @[1|4057966|Robinf]

Was in the Sherry region few weeks back, and not come across this beautiful Fino from Peter Sisseck. Had to try of course 😇. And a beauty it is imho; oxidative impressions of wax, mashed apple, pineapple, touch of resin, iodine and lots more, some mushroom and herbs too. Med/med+ well enclosed acidity. Nice saline touch and in perfect balance with the nose. Little saline. Does not display the alcohol at all. This is very well done indeed. 17 pts

Blindtasted - Golden hue. Also oxidative. Cooked apple - pineapple. Salt. Thyme. Dryer than wine 4. This marks a dry fino sherry to me. Finally a wine I nailed in guessing - bottled in 2022. Abv 15%.

Fresh and complex. Dry and mineral, salty, acidic, but not too much. Drank it paired with jamon iberico and royal ossetra caviar. Who needs more?
