Barbadillo Pastora Manzanilla Pasada en Rama

This dry fortified wine is made from Palomino Fino in the D.O. Manzanilla Sanlúcar de Barrameda by the Barbadillo winery. It features a bright golden color, intense aromas of yeast, dried fruits, and chamomile, leading to a complex and saline palate.

Key facts

  • Grape variety: Palomino Fino
  • D.O. / Region: D.O. Manzanilla Sanlúcar de Barrameda
  • Winery: Barbadillo
  • Soil / Altitude: Albariza
  • Ageing / Cellaring potential: 9 years under the criaderas and solera system

The vineyard

The grapes are sourced from vineyards planted on the region's characteristic albariza soils. The aging cellar, located in the La Pastora estate near the river, provides an optimal microclimate for the continuous development of the flor yeast.

Ideal combination

Winemaking

The wine undergoes nine years of biological aging under the traditional criaderas and solera system, starting in the Solear solera and finishing in La Pastora. It is bottled 'en rama' (unfiltered) to preserve its natural character.

Why buy it

If you are looking for a dry fortified wine with deep tradition and complexity for your cellar, this bottle is an excellent choice. Its saline profile pairs beautifully with seafood and cured cheeses. You can buy Barbadillo Pastora Manzanilla Pasada en Rama online directly from our store.

(4,0) This has had some additional aging, making this more round and creamier. Floral notes. Salinity, some cheese. Almond, a little bit more walnut than in the less aged versions. Orange zest far away. Chamomile. Lovely roundness.

Not a lot of apple in this manzanilla. Pretty complex, both nose and palate. Cheesy, nutty, almondy. But with great acidity and herbal notes at finish.

Bread, yeast, green olives on the nose. On the palate, green olives, smoked almonds, brine, seaweed, artichoke, marmite. Rich for a manzanilla.

Whoa salty girl! Green olive brine, almonds, oranges, chamomile, seaweed. Tangy acidity, keeps fine for 4 days opened in the fridge for those aperitif combos with aged serrano or anchovies. Sublime with andalusian cold tuna and potatoes starter.

Children of the Ocean degustation. Great example of deep Manzanilla with prolonged ageing (Pasada), on the way to Amontillado. It’s the first Sherry made by Barbadillo which started to sell it in 1821. 100% Palomino Fino from Sanlucar de Barrameda (Cadiz, Andalucía) matured under the flor in American oak barrels in bodega Solear as Barbadillo’s Manzanilla Solear and then transported to bodega Pastora on the river Guadalquivir for prolonged ageing (12 years in total). Unfiltered. Saturated citrine colour 🔽🔽🔽

In Cadiz at Código de Barra. Dinner with local wine pairings. Starting with this Manzanilla Pasada from Jerez. Salt, almond. Beautiful and delicate. Medium to long finish.

Outstanding wine, intense, pungent, with so long finish… nutty, with preserved pickled lemon, bruised apple, chamomile, bread crust, curry powder and sea brine. Hazelnut, walnut, mushroom. Meditation wine, still fresh and velvety in the same time. The body is medium but with the oily texture in the same time. The textural sensations are going ahead with the flavors’ richness. Great bottle.

Very nice one. Fresh walnut and grilled almond, apple skin. Powerful nose with pronounced oxidative aromas. Palate is more delicate and saline. Very enjoyable with cheese. Good alternative to more expensive Vin Jaune.

It is a lovely manzanilla I must say, aged and mature. Golden a little in color. Pronounced intensity on the nose. Yeast, slight oxidation, almonds, roasted nuts. So savory, so saline. Beautiful

Maybe after a week of some amazing Sherries I’m dropping my rating a tad. Still fantastic balance of saline, yeast and nutty aromas.

🗓: NV 🍇: Not stated 👁: Medium- gold 👃: Medium to medium+ intensity for nose. Notes of minerals, nutty, almond, citrus, floral 👅: Dry, medium+ acidity, full bodied, 15% abv, palate is similar to nose , medium+ to long length finish During a tasting event a couple of months back I tried this and I remembered it was rather enjoyable. I had one bottle at home and just tried it with my brother. It’s nice but not as enjoyable as what I remembered. 4.1 pts for me

Notes of citrus, green apple, and almond, finished with distinctively saline minerality. 15% abv provides a lot of potency, which is daunting especially on the nose, but the experience is overall positive.

Nose of almond, hazelnut, sweet banana, a bit of honey and raisins Tastes drier than it smells. Closer to a Fino in taste. Notes of almond, apples, a bit of chamomile on the aftertaste Very oily and fat with high acidity and long aftertaste

Bingo! The sweet spot in the lineup. Hits all the marks. Briney (not “Britney” autocorrect! What are you? Stuck in the 90s?!) saline aromas. Dried almond skin. Textured. Fresh. Saline. Delicious. This one hits the mark.

Comparably new manzanilla called in honour of a very first brand bottled by the bodega in 1827. 6y in Solear solera followed by 3y in a separate La Pastora solera, bottled ‘en rama’ according to tradition. Rustic, nutty and yeasty nose. Walnuts, yellow apple, melted milk chocolate is followed by a chamomile tea and dried hay notes. All-round, chalky and surprisingly well balanced palate. High acidity, extra generous salinity and brininess. Exemplary manzanilla to close down the week.
