Comando G Camino del Pilar Crianza Biológica 2022 es un vino blanco seco elaborado con la variedad Albillo, procedente de la Sierra de Gredos, a tan solo 100 km al oeste de Madrid. Esta bodega se ha consolidado como un referente en la producción de Garnachas de altura y vinos de identidad única, trabajando con viñedos situados entre los 900 y 1.200 metros bajo un enfoque orgánico y biodinámico que busca reflejar con pureza el carácter del terruño.

Este singular vino blanco es una de las creaciones más emocionantes de Comando G. Se trata de un Albillo elaborado al estilo tradicional del Jura: envejecido en barricas sin llenar por completo, lo que permite el desarrollo de una capa natural de levaduras (flor). Este proceso aporta complejidad y personalidad únicas al vino. La crianza se prolonga durante más de dos años bajo la acción de esta flora, seguida de un año adicional de reposo en botella antes de salir al mercado.

La producción es extremadamente limitada: solo se elabora una barrica, con un total aproximado de 844 botellas de medio litro, lo que lo convierte en una auténtica rareza para coleccionistas y amantes del vino de autor. Una joya enológica para quienes desean comprar vino online exclusivo, diferente y con un marcado sello de identidad.

Nose showing pine needle, a hint of banana, kohlrabi and ripe yellow fruit. Viscous on the palate with an almost fortified impression. Sharp and distinctly ripe fruit expression, with touches of yeast and a nutty character. Slightly bitter, long and driven by high acidity.

Comando G dinner at Le Foote, limited TN. Real fino sherry vibes, grappa-like almost but with more discretion. Saline, apple, olive, savory, lingering finish. Tasty gear, different too but not worth AUD retail pricing especially as 500mL bottle.

Biologically aged albillo from Camino G I braced myself for a super funky Vin Jaune style, but this is much more softer and enjoyable. Pale lemon Med+ nose citrus cream oak a hint of Flor aging and some caper note which I associate typically with Flor aging. On the palate it has a med+ body, creamy still but with a very saline driven character. Palate is pronounced and finishes lip smackingly long 😂

This is old vine Albillo Real from a 1Ha granite plot at 850m asl, aged for a year in an old manzanilla cask under flor, then a year in demijohns and a year in bottle. It is a wine developed by mistake around 2010. Apple, green olive and lemon, yeast, almonds and spice. It is dry, unfortified (14% ABV), fresh and nimble, salty with plenty of acidity. Total production 844 50cl bottles. As a sherry lover I found this very easy to enjoy. Lunch at Comando G, Sierra de Gredos, 8th May 2024.

Comando G Visit 15 of 17 Not many producers talked too passionately about Albillo. Not enough acid or complexity was the theme. I enjoyed the examples we tasted more than the others in the group… This was nothing like this examples though. 2 years under the flor in a 10 year old Manzanilla barrel. 1 year in Demijohn. Edgy, funky and spicy. Head scratching dry finish.

Final wines from Comando G lunch earlier in May, 2 of 3 - A novelty wine made from Abilo, the local white grape, aged under Flor. The wine spends one year in old Amontillado barrels and then ages further in demijohn. Fascinating taste spectrum of unripe pear, green olive, macadamia nut, almond, nutmeg and clove. As is typical for Comando G wines, great length and persistence.
