To the east, along the Duero, Ribera del Duero makes Spain’s most intense Tinto Fino reds, and nearby, between Sardón and Valbuena de Duero, are some of the country’s most prestigious wineries, such as the single-estate Abadía Retuerta. To the south, Rueda is the home of Verdejo. To the north, Cigales keeps alive the tradition of clarete, a deeply coloured rosé made from red and white grapes. And to the west, in Zamora, Toro makes powerful reds from Tinta de Toro.
With wood-oven roast suckling lamb, a Ribera del Duero crianza or reserva. With the pinchos and tapas of the old town, a Rueda Verdejo. With the aperitif and cured meats, a Cigales clarete. With sopa castellana and morcilla, a Ribera roble. With Tierra de Campos pigeon, an oak-aged Toro. And with aged sheep’s cheese, any red from the province with a few years in bottle.
