Ideal combination

Fish

Fish pairs best with white and rosé wines: they don't overpower the taste and suit different cooking methods.

Match

Poultry

Poultry works with light white wines — Chardonnay, Sauvignon Blanc — or soft reds like Pinot Noir, Grenache.

Match

Sushi

Sushi and sashimi pair well with light, high-acid white wines — they refresh the palate and let the delicate flavour of the fish come through.

Match

Winemaking

Following a manual harvest, the grapes undergo whole-cluster pressing and separate vinification by parcel. The wine is aged in a unique combination of stainless steel, concrete, oak, and demijohns, followed by bottle aging.
