Ферментация проходит на диких дрожжах с использованием целых гроздей в деревянных чанах. После традиционного мягкого перемешивания сусла ногами вино выдерживается от 15 до 18 месяцев в бочках объемом 228 литров при минимальном вмешательстве и почти без добавления диоксида серы.

2025-05-02 This Gamay felt more like Pinot in a blind setting. The nose was lovely - albeit a bit oaky - with red berries, earth, flowers, a touch of syrup, vanilla, nuts and a hint of chocolate. It showed decent body and good acidity, but the finish fell a bit short. A curious one - quite enjoyable, but something about the style felt oddly off.

A lot of raspberry and/or mulberry jam on the nose. This wine needs more than 2 hours in the decanter to fully express itself. Quite balance but the taste is somehow linear. This is only at average good level, not the level of excellence I would expect from PP. That explains my 3.8. P/s: drank another bottle few days later and this time it showed up more beautifully with lots of spiciness and fine tannin. 3.9.
