So savoury, grilled meat dried herbs oak blackberry blackcurrant pepper tar balsamic sweet tobacco. A lot of concentration, with sweet tannins that almost melted away. Currently it’s aged to a point where it developed enough tertiary flavours while maintaining freshness. Acidity is not the most dominant character but enough to keep a good balance. It pairs really well with meat dishes, especially Iberico ham.
