El viñedo

Las uvas provienen de viñedos cultivados de forma ecológica en la famosa "milla de oro", situados sobre suelos calizos. Esta composición del terreno aporta una notable finura y frescura a las variedades Tempranillo y Cabernet Sauvignon.

Elaboración

La fermentación se realiza con levaduras autóctonas, seguida de una fermentación maloláctica en barricas de roble francés. El vino se cría durante 18 meses en barrica y se clarifica de forma tradicional con clara de huevo antes de ser embotellado.

The bouquet is focused and mineral-driven, offering aromas of aged wood nuances, pipe tobacco, creamy oak, and sweet spices over a backdrop of crushed black plums and chalk. Hacieda Monasterio starts in 1990 when Peter Sisseck (whom later founded Dominio de Pingus) arrived in Ribera del Duero to manage the Estate. This vintage is a blend of 80% Tinto Fino (Tempranillo) and 20% CS, aged for 18 months in new French oak. Second time trying this wine, and first time trying this vintage. Really good wine. So savoury, grilled meat dried herbs oak blackberry blackcurrant pepper tar balsamic sweet tobacco. A lot of concentration, with sweet tannins that almost melted away. Currently it’s aged to a point where it developed enough tertiary flavours while maintaining freshness. Acidity is not the most dominant character but enough to keep a good balance. It pairs really well with meat dishes, especially Iberico ham.
