The vineyard
The Pedro Ximénez grapes come from old bush vines in the Paraje de Riofrío Alto, located in the Sierra de Montilla. This exceptional vineyard is known for its chalky soils, which lend freshness and a distinct mineral character to the wine.

After a manual harvest, the must ferments in concrete vats (tinajas). The wine then undergoes biological ageing under a veil of flor yeast for eight months in these vats, followed by ten to twelve months in old oak casks.
