The vineyard
The vineyards are located in a high-altitude mountain environment, ranging from 800 to 1,230 meters above sea level. This cool Pyrenean climate allows for a slow ripening of the Sauvignon Blanc grapes, preserving their natural freshness and structure.
Winemaking
Following a manual harvest in small 10 kg boxes, a portion of the wine ferments in new French oak barrels with lees contact, while the remainder is vinified in stainless steel tanks.
