The vineyards are influenced by the unique microclimate of Sanlúcar de Barrameda. The proximity to the Atlantic Ocean and high humidity support the continuous development of the yeast cap known as velo de flor.

On the nose, it’s rich and complex — seaside air and seashells, layered with white and yellow flowers. lily baby’s breath There’s a thickness to the aroma, a sense of density. On the palate, it’s highly saline, - a mix of pure clover honey and green apple skins. The density is entirely different from the classic Deliciosa: wider, thicker, and more textured. Color I taste: soothing green.

At Berria Wine Bar in Madrid, the best Spanish by the glass menu that I've seen. 3.8 This is the most pure manifestation of umami in a wine that I have ever smelled. Not for everyone but being Asian it reminds me of a mellowed version of Maggi seasoning sauce and I like it. It does burn off a bit though and then you have s more classic manzanilla nose Quite savory on the palate, could do with touch more acid

Manzanilla sherry is nothing if not interesting. I read a bit, an interesting process to make it, only in coastal Spain, from Palomino 🍇. Golden in colour, not quite clear, slight cloudy (en Rama implies a special selection unfiltered). Nose is complex, yeast, sourdough bread, high ethanol, walnut, aged yellow fruit. Dry, medium body, high acid. Flavours of walnuts, cashews, almonds, dried apricot, moldy bread, flor, bruised and browned yellow apple, olives, minerals, salt. That's all I got. 3.8 🏍😎

4.05/5 . Pours a bit darker, pale yellow. Scent is very full, vastly different than the regular one ( both sampled in late 2021 - both were Saca 2019 ) Very dry impression, Nuttyness - but different than oxidative. Taste is very full, dry (even more so than the regular one) , higher minerality. More intense wine which I personally prefer, but I can see the 'big audience' prefering the more gentle regular manzanilla.

Manzanilla.... a flor Sherry... lighter, fresher than oxidative styles of Sherry. This one is En Rama... so probably slightly fined and filtered for export (but En Rama can also be unfined and unfiltered). This is from Sanlucar de Barrameda... closer to the ocean. The climate is more humid, the flor is thicker and the yeast strains produce lower levels of acetaldehyde vs. Fino Sherry. Acetaldehyde gives sherry those flavors of apple skin, bruised apple, chamomile, hay and even a slight bitterness.

Another endgame Manzanilla. Concentrated, with creamy consistence. Roasted, salted almonds, walnut, dried banana, chamomille with banana peel herbaceousness. A hint of quince, is the closest to fruity primaries you can get to. The brine salinity is overwhelming and inebriating but a bit domineering. Which might be a plus or minus depending on how much one enjoys extremes.
