Dulas del Lagar de la Salud Blanco Fermentado en Barrica 2021

This dry white wine from D.O. Montilla-Moriles is crafted entirely from Pedro Ximénez grapes by the Lagar de la Salud winery. It features aromas of citrus and tropical fruits with spicy undertones, a creamy texture on the palate, and a long finish.

Key facts

  • Grape variety: Pedro Ximénez
  • D.O. / Region: D.O. Montilla-Moriles
  • Winery: Lagar de la Salud
  • Soil / Altitude: Clay-limestone with iron oxide
  • Ageing / Cellaring potential: 12 months in French oak barrels

The vineyard

The grapes originate from the Pago del Lagar de la Salud in Montilla, where clay-limestone soils are rich in iron oxide. The vineyard is managed with minimal tillage and restrictive pruning to ensure high concentration in the fruit.

Ideal combination

Winemaking

Fermentation begins in stainless steel tanks and finishes in French oak barrels, followed by twelve months of aging on the lees with battonâge to enhance body and complexity.

Why buy it

On the sweeter side - oaky flavour. Very nice and light for lunch!

Nice wine to have with fresh food, maybe some tapas for aperitif. Surprisingly salty/sea taste with a mineral aftertaste. Dry apple taste slightly. Would happily have it again.

Amazing richness of multiple flagrances. Really difficult to spot a dominant one. Such a pleasure taking a trip through evolving taste while the wine progress in your mouth and leaves long standing impressions. I love it

Minerals honey peach Really cool wine considering the grape is used in Sherry. Dry with a hint of sweetness.

#MST29-1 🍇 Grape Variety: Pedro Ximénez 📍 Region: Montilla-Moriles 🏺 Producer: Lagar de la Salud 👁️ Appearance: straw yellow 👃 Nose: ripe peach, yellow apple, raisins, blossoming flower, vanilla. 👄 Palate: nose, long finish, silky voluptuous. 🌡️ Temperature: 12°C 📝 Overall impression: don't expect hard acid nor refreshing apéro, do expect an explosion of fruitiness on a fine platter of vanilla, finished with some edible flowers on top.

Very typical cherry smell and also taste is definitely present. I do like good cherry... Lemon zest, nectarine, carambola, acacia, almond note, salty, minerals. Long finish with nice acidity.

A new MST-round 29 organized by @[1|4177809|Raf De Leu] and @[1|964648|Nieuwe Wijnen] 👌 I’m unfortunately a bit late due to a small alocohol break, but this opener is already very special: First a thought „brrr 😱“, then „hmmm 🤔“ and later „wow 🤩“! Clearly noticeable throughout the whole journey the wooden barrique notes, but in general dominated by ripe fruits and smart salty minerals until a long end where bitter grapefruit notes are mixing with the salty sea breeze. Very interesting start 👏

MST 29.1. We start this round with the new vintage of this stunning good dry PX. Quite the difference with ’19: less bold, far more minerals & savory: stunning 🥰! Opening mineral driven with flint & salty sea breeze whiffs mixed with Garrigue like herbs with some fennel, almonds, ripe orchard fruit with apricots & ripe slightly bruised apples. The palate is refreshing offering a good balance between crispiness & sour cream surrounded by salty minerals while ending quite long & savory with salty grapefruit bitter👌

MST 29.1 Vintage ‘19 blew me away (stock left 😉) so curious about ‘21! I can imagine that this is not everyone’s cup of wine (🤭) but I love the style! Feels a little more gentle compared to ‘19 but still layered with scents of roasted bread & walnut quickly taken over by elegant vanilla & butter puffs, lemon rasp, honey suckle, dried apricot (remarkable!), white peach, apple, pineapple & dried herbs. Round & soft on the palate but also very elegant & layered too where the lemons provide freshness ⤵️

MST 29 #1: pale yellow color; discrete nose with floral notes, white and stone fruit, flint, citrus and green apple; the palate however is abundantly rich with layered fruit and backed by refreshing saline acidity and (slightly) earthy minerals; the fruity acidity carries the finish to a long and cleansing mouthfeel; great MST start; looking forward already to next week (also start of my summer holiday 😉)

#MST29-1 new round organised by @[1|4177809|Raf De Leu] and @[1|964648|Nieuwe Wijnen] We kick off with a first timer to me; dry PX! M aroma, slightly oxidative, saline, even some cheese, marzipan, nectar, peach, lemon zest Resemblance with dry sherry, bit creamy, bit tannic and the alcohol is obvious. Very interesting wine, h acidity, with a good balance, m+ length and intensity, h complexity. After second glass, the acidity is calling for a good pairing!
