El viñedo

Las uvas provienen del exclusivo Pago Capellanía, una parcela de seis hectáreas plantada en 1945. Situado a 485 metros de altitud en la zona más elevada de la Finca Ygay, este viñedo cuenta con suelos arcillo-calcáreos que aportan una notable complejidad al vino.

Combinación ideal

Elaboración

Tras un suave estrujado y una breve maceración, el mosto fermenta en depósitos de hormigón a baja temperatura. Posteriormente, el vino realiza una crianza de 20 meses en barricas de roble francés y finaliza con un afinamiento de 15 meses en hormigón.

A very good impression of the grape. I am learning to love it and will explore more of this. In the nose very ripe apples, pears, marzipan, herbs and a hint of spices like vanilla and cinnamon. On the palate opulent, good acidity and phenolic notes. Very interesting and well worth looking more into. I have enjoyed this tremendously.
