The vineyard
The grapes are sourced from about twenty plots in La Orotava, situated at altitudes between 350 and 700 meters. The vines, aged up to 180 years, grow on volcanic, clay-loam soils under a distinct Atlantic influence.

After fermenting in unlined concrete vats, the wine undergoes malolactic fermentation in concrete tanks and barrels. It is then aged for 11 months in concrete, foudres, and 500-liter oak casks.
