Производство

После ручного сбора урожая сусло ферментируется частично с гребнями в открытых деревянных чанах. Затем вино выдерживается в течение 14 месяцев в старых 225-литровых бочках из французского дуба и разливается по бутылкам без осветления и фильтрации.

Really noticed the step up in quality compared to the Camino Real. One of the top levels in Pedro Pérez stables, who in my view is one of the best producers in Ribeira Sacra. No small achievement given the difficult steep terrain in central Galicia. I may be missed given “Guímaro” translates to “Rebel” 🏳️🚩 Bright cherry in colour with ripe red fruit notes. Good acidity and spicy fine tannins. Balance:✅✅✅✅ Length; ✅✅✅ Intensity: ✅✅✅✅ Complexity: ✅✅✅✅ 2 of 7 had at Greenman Wines with Rafa Salazar

I didn’t really read up about these wines before buying, but looking at it now, this would not typically be the most appealing cuvee for me. However, the 2021 just works. 70% Mencia / 30% Local varietals. Matured in 225l French oak barrels. ~100yo vines. Planted in terraces on slopes with a steep 50% incline on granite and slate soils. More floral than the Pombeiras. More lifted and elegant. Earthy. Floral. Beautifully perfumed. Very silky. Doesn’t quite have the nice texture of the Pombeiras, but still works.👇

Maybe I just love Mencia, but this is a damn good wine, especially for the price. Beautiful bouquet and peppery red fruit and pomegranate taste. On the Camino de Santiago this is the wine we drank in Galicia. Every sip pulled forth memories of joy and friendship from the Camino. Drink this wine, and if circumstances permits, walk the Camino to experience this wine in its native habitat.

Gorgeous wine! Showing all greatness of the Mencia grape. Med body, med+ acidity, and med tannins. Red fruit dominating the palate with cherry mostly and some raspberries. Quite a complex wine with tobacco, mushrooms, chocolate, smoke, mint, oak, pepper, and more. Excellent wine with many years ahead of it.
