The vineyard
The grapes are sourced from a historic vineyard located at a manor house in Sisán, Ribadumia. The silty soil with alluvial pebbles, combined with the cool Atlantic climate, provides optimal conditions for cultivating the vines.
Winemaking
Fermentation occurs spontaneously in 1,500-liter foudres. The wine is then aged for 12 months, primarily in a fourth-use foudre with a small portion in used oak barrels of various sizes to add texture.
