The vineyard
The grapes are sourced from old vines over 70 years old, cultivated in the rural area of Sava within the Taranto province. These vines are trained using the traditional Apulian alberello system in sandy soils. The climate of Manduria, with sunny days and significant day-night temperature shifts, ensures optimal and balanced grape ripening.
Winemaking
Following a manual harvest, the grapes undergo destemming and maceration on the skins for up to 15 days. Fermentation is carried out at a controlled temperature, followed by 20 months of ageing in large 5,000-liter oak casks. The wine is then refined for four months in stainless steel tanks and an additional three months in the bottle before release.
