A fascinating Bolly disgorged in 2013 and drunk in 2024 to celebrate my son Louis with good friends. On the nose toasted brioche, honey and baked apple. Their palate follows through with similar flavours but surprisingly acidic and lemon peel and quince. Perfectly balanced medium plus body and medium acidity with an elegant and chewy finish.

What a treat, quite a rare find to celebrate sister’s graduation. Beautiful and deep gold colour. The scents are very diverse and well developed. Brioche, honey, toast, Apple, even some smoke in the end. Such a delight for the senses. On the palate the deep and varied and above all long and complex flavours envelopes you. Honey and caramel, orange peel and lemon. Oak, toast and nutty flavours. Aftertaste is long and complex. Tobacco, smoke and dried fruit. Even toffee. I love it, shame it is so hard to come by.

So good. Flavour is changing as I drink it. Smells and tastes like cake. Particularly Christmas cake or pound cake. Honey and apricot along with some peach as well. Brioche is super prevalent, almost yeast is better to describe it at first and then gets better with oxygen. Cream is coming with it as well. Caramel with slight almond amaretto notes. Slight nutty. enjoying Jordan’s convocation from his birth year. Hazelnut as it comes out too.

Lovely. My first 1996 in some time. Worth waiting for! Honey on the nose. Although it is dry it has almost tropical flavors along the acidity and minerality. Beautiful! Had it with Canadian lobster, Swedish langostines and bleek roe. What a night!
