Key facts

- Soil / Altitude: Clay-limestone, Kimmeridgian subsoil
- Ageing / Cellaring potential: 8-10 months on fine lees
The vineyard
The grapes are sourced from vineyards situated on the slopes and plateaus of the Yonne department. The clay-limestone soils with the characteristic Kimmeridgian subsoil of Jurassic origin impart a structured and mineral character to the wine.
Ideal combination
Winemaking
Following a gentle pressing, fermentation takes place in temperature-controlled stainless steel tanks. The wine then undergoes malolactic fermentation and is aged on its fine lees for eight to ten months to develop texture and complexity.
