The vineyard
The grapes originate from the "El Pozo" plot in Villaester, featuring ungrafted vines over 50 years old planted at an altitude of over 700 meters. The terroir consists of sandy soils with clay layers, cultivated organically and biodynamically to foster soil biodiversity.
Winemaking
Following manual harvesting, fermentation is carried out with indigenous yeasts for 15 days. The wine then undergoes aging for 30 months in French oak barrels, enhancing its structure and complexity.
