San Román 2021

A dry red wine from D.O. Toro, crafted by the renowned San Román winery. It features complex aromas of ripe black fruits, balsamic undertones, and spices, supported by a firm structure with polished tannins and balanced acidity.

Key facts

  • Grape variety: Tinta de Toro
  • D.O. / Region: D.O. Toro
  • Winery: San Román
  • Soil / Altitude: Stony and clay soils
  • Ageing / Cellaring potential: 24 months in French and American oak barrels

The vineyard

The grapes originate from estate vineyards in Hornija, Villaester, and Morales de Toro. These plots are cultivated using organic and biodynamic practices on stony and clay soils, which contribute concentration and regional character to the fruit.

Ideal combination

Winemaking

The wine is aged for 24 months in 225- and 500-liter French and American oak barrels, utilizing a combination of new and used wood to refine its structure while preserving the fruit profile.

Powerful, intense and exceptionally refined. Deep ruby color with expressive romas of blackberry, cassis and ripe black cherry, layered with graphite, licorice, cedar and sweet spices. On the palate it’s full-bodied and beautifully structured, offering concentrated dark fruit, polished tannins and perfectly integrated French oak. Despite its power, it remains remarkably balanced and elegant, finishing long with notes of cocoa, mineral nuances and subtle freshness. A world-class Toro with outstanding aging potential

2021 vintage. Deep ruby/purple color, dark fruit on the nose. On the palate, dark plum and black cherry, with notes of vanilla, cola, and oak. Silky tannins, medium acidity, some green stems on the finish. A beautifully balanced and easy-drinking wine from the Toro region of Spain. It’s made from 100% Tinta de Toro, which they say is just Tempranillo. But like Cabernet in Napa, there is some kind of magical juju that happens to Tempranillo in Toro. Drinking great now, and for at least another 3-4 years. 93 points.

At five years old this is drinking beautifully. Deep garnet with a hint of age on the rim, its abundant aromas fill the nose with more blueberry rather than blackberry notes. The fruity flavours are silky smooth and rounded on the palate, aided by 2 years ageing in oak, good structure with just a hint of drying tannins in the mouth. Altogether a very accomplished wine that will give pleasure for several years to come.

5 years old, surprising presence of loads of acidity keeping the full body in check, blackberry and sour cherry, pretty dense, gains with aeration hinting to substantial aging potential

Superb Spanish Toro. Excellent depth with full on berry flavour both on the nose and in taste. Great wine. 2021 bottle had the tiniest bit of sediment in it but probably drank at the right time.

Had the 2009 last year and it was exceptional. The 21 is obviously much younger and could really use the age seeing how much it benefits. Very fruit forward in the beginning but once it opened up it had more balance and was much more enjoyable.

Way too young but good!👌🏻🍷😊 A solid aeration is necessary to open this 100% Tempranillo which was aged for 24 months in new and used French and American oak barrels. Aromas and flavors of red & black currants, cherries, tobacco, oak, graphite, floral notes, spices, some licorice and hints of vanilla. Juicy with still present and slightly astringent tannins.
