The vineyard
The grapes originate from organic vineyards in La Aguilera, situated at an altitude of 900 meters on sandy-limestone soils. The vines, a mix of old and younger plants, are cultivated with minimal environmental impact and deep respect for local biodiversity.
Winemaking
The vinification follows artisanal methods, including traditional foot-treading of whole clusters in concrete vats. After spontaneous malolactic fermentation, this red wine undergoes 33 months of aging in French oak barrels and is bottled without fining or filtration.
