Secrets of the Catalan Hills: Penedès and Cava Production

Catalonia became the birthplace of Spain's premier sparkling wine thanks to its Mediterranean climate and distinct winemaking approach. We explore how the geography of Penedès and the traditional method shape the character of Cava.

The Birthplace of Spanish Sparkling Wine

Penedès is not just a geographical area, but a complex ecosystem where the famous Cava is born.

What is Penedès and D.O. Cava

Penedès is a wine region in Catalonia, located southwest of Barcelona. Historically, it was here in the late 19th century that sparkling wines first began to be produced using the classic method of secondary bottle fermentation. Today, the region is divided into three climatic zones based on altitude, allowing for the cultivation of grapes with highly diverse characteristics.

Unlike most European appellations, D.O. Cava is not tied to a single specific territory. It is a multi-regional status, yet over 95% of all Cava is produced in Penedès, around the town of Sant Sadurní d'Anoia. Local wines are easily recognized by their fresh fruit profile, moderate acidity, and characteristic notes of ripe apples, citrus, and toasted bread.

Traditional Method

Xarel·lo: The Backbone of the Catalan Blend

Among the three traditional grape varieties for Cava, Xarel·lo holds a special place. This indigenous variety features high acidity and an elevated level of the natural antioxidant resveratrol. It is Xarel·lo that provides the structure, ageing potential, and characteristic herbal and mineral nuances in the finished wine.

While Macabeo brings fruit freshness and Parellada offers delicate floral aromas, Xarel·lo delivers density and body. Without it, classic Cava would lose its gastronomic versatility and ability to evolve in the bottle over many years. Penedès winemakers are increasingly experimenting with single-varietal Xarel·lo wines to highlight its unique character.

The variety's high drought tolerance makes it a key element of Penedès winemaking in a changing climate. Xarel·lo vines thrive on the clay-limestone soils of Medio Penedès, maintaining a balance of sugar and acidity even in hot years. This allows winemakers to produce complex vintage releases with minimal dosage.

Evolution of Quality Standards

Over the last few decades, the production structure of sparkling wines in Penedès has undergone significant changes.

The Birth of a Classic Style

Sparkling wine production in the region began in 1872, when Josep Raventós of the Codorníu winery applied the French method of secondary bottle fermentation to local grape varieties. This experiment proved successful and quickly turned Sant Sadurní d'Anoia into the capital of Spanish sparkling winemaking.

For a long time, Spanish Cava was perceived as an affordable alternative to Champagne. However, over time, the focus shifted toward quality, requiring a revision of the appellation rules. The introduction of strict ageing requirements helped highlight a premium segment of wines capable of competing with the world's finest examples.

Today, the Cava classification includes three main categories based on lees ageing: Cava de Guarda (minimum 9 months), Cava de Guarda Superior Reserva (minimum 18 months), and Gran Reserva (minimum 30 months). A special place is reserved for Cava de Paraje Calificado wines, produced from specific outstanding single vineyards with a minimum ageing of 36 months.

The Rise of Alternative Brands

In search of stricter quality standards, some producers decided to leave the D.O. Cava. This led to the creation of the Corpinnat brand in 2018, uniting wineries that produce sparkling wines exclusively by hand, from organic Penedès grapes, and with extended lees ageing.

In parallel, the Clàssic Penedès category is developing within the D.O. Penedès. These wines are also made using the traditional method but require 100% organic viticulture and mandatory vintage dating on the label.

This division has fostered healthy competition within the region. It has prompted major D.O. Cava producers to implement zoning and tighten their own regulations, ultimately raising the quality of Spanish sparkling wines as a whole.

New Zoning of D.O. Cava

In response to market demands and criticism from independent producers, the D.O. Cava regulatory council introduced official geographical zoning. Now, premium wine labels can specify the exact zone of origin, helping consumers better navigate the styles.

The main production zone is named Comtats de Barcelona. It covers the historical lands of Catalonia, including Penedès. Within it, smaller sub-zones have been defined, such as Valls d'Anoia-Foix, where the oldest vineyards are concentrated.

The other zones—Valle del Ebro (north of the country), Viñedos de Almendralejo (Extremadura), and Zona de Levante (Valencia)—represent other regions of Spain. This division highlights the uniqueness of the Catalan terroir as the historical heart of production.

Microclimates of Penedès

The diverse topography allows Penedès to be divided into three zones, each contributing uniquely to the wine spectrum.

Baix Penedès (Lower Penedès)

This zone is located right by the Mediterranean coast at altitudes up to 250 meters. It features a warm maritime climate, with soils consisting mainly of sandy alluvial deposits and clay. Under these conditions, red grape varieties and white Macabeo ripen beautifully, with the latter acquiring a soft, rounded fruit profile and moderate acidity.

Medio Penedès (Middle Penedès)

Located at altitudes between 250 and 500 meters above sea level, Medio Penedès is shielded from direct sea winds by a coastal mountain range. This is a hilly area with clay-limestone soils. It is the ideal terroir for the Xarel·lo variety, which yields structured wines with an excellent balance of freshness and density.

Alt Penedès (Upper Penedès)

The upper zone rises to altitudes of up to 800 meters in the foothills. Here, the climate is noticeably cooler, with more pronounced diurnal temperature shifts. This is the realm of the delicate and aromatic Parellada variety, as well as international varieties like Chardonnay and Pinot Noir, which retain the high acidity essential for complex sparkling wines.
