The vineyard
The grapes come from unique vineyards aged between 100 and 200 years located in Nieva, Segovia. These pre-phylloxera vines survived thanks to the sandy loam soils and are cultivated under organic certification.

Harvesting is done by hand, and each plot is vinified separately in oak barrels of varying capacities. The wine ferments with indigenous yeasts and undergoes ageing for ten months on its fine lees in the same barrels.
