The vineyard
The grapes come from a 22-hectare vineyard of old vines cultivated under Demeter-certified biodynamic principles. The terroir is defined by red clay soils over a limestone base, which shapes the profile of the fruit.

Winemaking
Vinification is carried out parcel by parcel with direct pressing of whole bunches. Fermentation takes place with indigenous yeasts in concrete vats, followed by aging on fine lees to enhance texture.
