The vineyard
The grapes are sourced from vines with an average age of 35 years, located in San Román de Hornija and Pedrosa del Rey. The extreme continental climate, with cold winters and hot summers, shapes the vines grown on soils rich in pebbles.
Winemaking
Following a manual harvest, fermentation takes place in stainless steel and wooden vats. The wine is then aged for 11 months in a combination of new oak barrels, foudres, and a small portion of stainless steel to maintain freshness.
