The vineyard
The grapes come from Finca Capeliños, a 0.6-hectare plot with century-old vines situated at an altitude of 350–400 meters. The slate, granite, and sandy soils, combined with a southern exposure, define the unique character of this vineyard.
Winemaking
Following a manual harvest, the wine undergoes partial whole-cluster fermentation in open wooden vats. It is then aged for 14 months in used 225-liter French oak barrels and bottled without fining or filtration.
