The vineyard
The grapes come from 40-year-old vines in the Salnés Valley, at an altitude of 100 meters. Granitic soils and eastern exposure encourage deep roots under the cooling influence of the Atlantic climate.
Winemaking
After manual harvesting, the grapes undergo cold maceration for up to ten hours. Fermentation in stainless steel is followed by eight months of aging on fine lees with periodic bâtonnage.
