The vineyard
The grapes are sourced from 25 parcels in the village of Atauta, located at altitudes of up to 1,000 meters on calcareous soils. The vineyard features pre-phylloxera bush vines, some over 130 years old, cultivated according to biodynamic principles.
Winemaking
Fermentation occurs spontaneously with native yeasts in open wooden vats. The wine is then aged for 19 months in 228-liter Burgundy oak barrels.
