The vineyard
The grapes originate from old, pre-phylloxera vineyards located in San Esteban de Gormaz, Soria. These small plots are situated at an altitude of 1000 meters in one of the coolest areas of the appellation, featuring clay-dominant soils cultivated organically.
Winemaking
Following a selective harvest, the grapes undergo a maceration process of approximately 30 days to extract their full character. The wine is then aged in French oak Bordeaux barrels before bottling.
