The vineyard
The grapes originate from Paraje de Valdegatiles in Atauta, a 0.3-hectare pre-phylloxera vineyard situated at an altitude of 950 meters. The old vines grow on sandy terraces over limestone rock, enclosed by protective stone walls.
Winemaking
Following complete destemming and spontaneous fermentation in open wooden vats, the wine undergoes ageing for 20 months in second- and third-use Burgundy barrels to preserve its fruit purity.
