Castell d’Encus Taika 2020

This is a dry sparkling wine from D.O. Costers del Segre, crafted by the Castell d'Encus winery from Sémillon and Sauvignon Blanc. It features aromas of melon and peach, fine bubbles, and a fresh palate with hints of green apple.

The vineyard

The grapes are sourced from high-altitude mountain vineyards situated between 800 and 1,230 meters above sea level in the Pyrenees. This cool, forest-surrounded environment allows for slow ripening and helps maintain excellent natural acidity.

Ideal combination

Winemaking

Following a manual harvest, the fermentation is stopped naturally so that the grape's own sugars drive the second fermentation in the bottle, without added sugar. The sparkling wine then undergoes a long aging of 70 months on its lees.

Pale yellow-green with medium+ intensity in nose and palate. Dry, medium+ acidity and body, medium alcohol, lively mousse. Developing wine with aromas of lemon zest, gooseberries, apple pie, yeast and brioche. Good wine with long finish. Drinkable now, but have some potential for aging. Overpriced at least in Finland (monopoly), out of the box grapes: Semillon and Sauvignon blanc 50/50.

Daring blend of SB and Semillion, methodo ancestrale, zero dosage, 60m on lees. Chalky nose with green apple peel, touch of white peach, toast, brasil nut, mushroom whiff, very notable yeast influence. Dry, sharp palate with a precise, medium+ acidity. Gentle, tiny mousse. Palate is mineral, nutty, accurate and elegant. Lingering, nutty, shroomy finish. Highly gastronomic one, worked amazingly well over the seafood pasta. Pricey, but in my subjectice taste can easily beat mainstream base-level champagnes. ⬇️⬇️

4.25 And rounded up for this fascinating Ancestral. Equal parts of Sauvignon Blanc and Semillon, no added sugar (I believe they add just a tiny amount of riesling instead). Fresh and straight to the bone, electric wine. Rubber and hydrocarbons, cherry & lime mousse, lime zest and tart green apples with a little touch of hay. Totally recommended! Iberuly #16 🇪🇸

A refreshing sparkling wine. Peaches and other stone fruits on the nose, matched with the same with minerality on the palette. Not much of an aftertaste. Would pass as a casual summer drink by the pool but definitely not the main attraction.
