The vineyard
The grapes are sourced from twelve selected plots with vines aged between 20 and 35 years, located in San Vicente de Sonsierra. The harvest is carried out entirely by hand to ensure the optimal condition of the fruit upon arrival at the winery.
Winemaking
Vinification is conducted using gravity-fed systems, with fermentation taking place in French oak vats. Malolactic fermentation and the subsequent 18 to 20 months of ageing occur in French oak barrels, with weekly rackings scheduled according to lunar cycles.
