The vineyard
The grapes are sourced from the El Tornillo estate, located in the municipality of Olivares de Duero. This vineyard sits at an altitude of over 900 meters, featuring limestone and stony soils with a northwestern exposure that ensures slow and balanced ripening.

Harvesting is done manually in small boxes to protect the fruit. After a very gentle pressing, the must undergoes a slow fermentation at temperatures below 12 °C for 30 days to preserve its vibrant aromas, followed by natural decanting.
