The vineyard
The grapes originate from an eleven-hectare vineyard in Sauzet, cultivated under Demeter-certified biodynamic principles. The soil, consisting of expansive clay over limestone rock, naturally regulates moisture and imparts a mineral freshness to the wine.
Ideal combination
Winemaking
Fermentation takes place with indigenous yeasts in small concrete vats. Gentle maceration and controlled pump-overs are applied to preserve the purity of the fruit, in collaboration with winemaker Matthieu Cosse.
