Winemaking
Following manual harvesting and meticulous selection, the grapes undergo cold maceration and temperature-controlled fermentation. Malolactic fermentation takes place in new barrels with bâtonnage for 30 days, followed by 26 months of ageing in 300-liter French oak casks.
