The vineyard
The grapes are sourced from the single parcel Les Barillers, located on the slopes of Vertus. This specific terroir imparts a distinctive complexity and a defined saline character to the wine, shaped by the region's chalky soils.

Winemaking
Fermented spontaneously with indigenous yeasts in Stockinger barrels and foudres, the wine ages on its natural lees for the first year without fining or filtration. Following the second fermentation, it undergoes at least five years of bottle aging before manual disgorgement with zero dosage.
