This is a really serious sparkling wine! This Cava is made with the classic grapes Xarel-lo, Macabeo, and Parellada. Grown in 60 year old vineyards. It rested on its lees in the bottle for about 9 years before disgorgement. Flavours of Apple, citrus, almonds, and brioche. Great sparkling wine 🥂

A special cava, not only because it comes from a special plot with old vines and low yield, but also because of the initial fermentation for 10 months in chestnut barrels, followed by another 90 months in the bottle. Disgorged in 2023, I think it is still too young to show the full potential, although it has already developed interesting tertiary notes. If I had to mention something that I didn't like, it would be the not very delicate mousse. Great pairing with japanese food. 9,2 PM

13 months in baroque then 6 to 7 years on the lees before disgorgement. Lots of sun on this south east facing plot. Yeasty nutty butter greatness with a spectacular nose created by autolysis. Buttered brioche toast and a creamy slightly sweet palate of yeasty buttery apples. Great value from a great producer.

12% 2013 Xarel-lo, Macabeu, Parellada 2,9 g sugar/liter 50 year old bush vines. First fermentation followed by 10 months ageing in chestnut wood barrels. After second fermentation it rested on the lees for 7,5 years. 349 SEK I think this is the best Cava I have ever tried! Clear, light yellow color with some green hues. Medium plus nose with *lots* of bread, toast, brioche notes. Almond paste, nutty, puff pastry, It’s almost buttery. Also shows some green herbs and hay, vanilla is sneeking up in the aftertaste.

Definitely very interesting wine, was a bit of disappointment though. Jerez style. Developed. On the green fruit side. Chalk, minerals, stone, pear, green apple, citrus, almond, caramel, toffee. A bit heavy on the pallet. Not quite in balance.
