The vineyard
The grapes originate from the Bourron du Levant vineyard in Cramant, facing southeast to capture the morning sun. Vines aged between 60 and 85 years yield natural concentration due to their deep roots in the Côte des Blancs soil.
Ideal combination

Fermented with indigenous yeasts in oak casks, the wine ages on its lees for one year without filtration. The second fermentation in the bottle lasts for nine years, completed by manual disgorgement and a minimal dosage of 2 g/l.
