The vineyard
The grapes originate from 22 organic parcels in the Costers d’Ordal area, situated at altitudes between 220 and 340 meters. The calcareous and gravel soils preserve the natural acidity and express the character of the local varieties.
Winemaking
Following fermentation with indigenous yeasts, the base wine ages on its lees for seven months, with 15% in French oak barrels. The second fermentation in the bottle lasts for at least 20 months, and the wine is finished without any added dosage.
