Vino complejo y expresivo, con aromas de almendra, masa de pan recién hecha, ralladura de limón y lima, manzana verde y marcadas notas de levadura de flor, acompañadas de una mineralidad que recuerda a la tiza húmeda. En boca es seco, fresco y vibrante, con un intenso carácter salino y sabroso. Su textura combina matices terrosos con fruta verde de huerto, culminando en un final largo, mineral y con delicados recuerdos de frutos secos.

Cota 45 UBE de Ubérrima Paganilla 2024 es un vino blanco seco elaborado con Palomino Fino en V.T. Cádiz. Nace en Cota 45, una pequeña bodega artesanal fundada en 2012 en Sanlúcar de Barrameda por el enólogo e historiador del vino Ramiro Ibáñez, cuyo proyecto busca recuperar los tradicionales vinos blancos de mesa sin fortificar que se elaboraban en el Marco de Jerez durante el siglo XIX.

El secreto de este vino se encuentra en su origen: las uvas proceden del viñedo homónimo, situado a unos dos kilómetros tierra adentro de Miraflores Alta. La parcela se asienta sobre albariza de tipo barajuela, un suelo de marcado carácter calcáreo que aporta al Palomino Fino una notable intensidad y una expresión muy particular de su lugar de procedencia.
