La nariz de este vino es sobria, vibrante y refrescante, ofreciendo fragancias de fruta roja fresca y agria. Resaltan los aromas de frambuesas y caramelos, junto con matices lácteos. En el paladar, se muestra nítido y ligero, caracterizado por una acidez marcada y una deliciosa mineralidad.

Ultreia Saint Jacques 2021 es un distinguido vino tinto seco, compuesto íntegramente por la variedad Mencía, creado por el renombrado enólogo Raúl Pérez en la región D.O. Bierzo. Raúl Pérez es ampliamente reconocido tanto en España como internacionalmente y proviene de una generación de viticultores del Bierzo.

Las viñas de la familia se localizan en Valtuille de Abajo, abarcando una superficie de aproximadamente 3 hectáreas. Los viñedos tienen más de 50 años de antigüedad, siendo los más antiguos de 1910, y están plantados en suelos arcillo-calcáreos. La región disfruta de un clima atlántico-continental, caracterizado por temperaturas moderadas debido a su posición de transición entre el interior y la costa.

La vinificación se lleva a cabo en depósitos troncocónicos de madera, utilizando maceraciones prolongadas y sin control de temperatura, minimizando la extracción. La uva se fermenta utilizando el 100% del raspón. Este vino madura durante aproximadamente 12 meses en barricas y en depósitos troncocónicos.
