Picaro del Águila Clarete, un rosado de la Denominación de Origen Ribera del Duero, es la creación de Dominio del Águila, ubicado en La Aguilera, Burgos. Esta bodega, fundada en 2010 por Jorge Monzón e Isabel Rodero, tiene sus raíces en la experiencia de Jorge, quien inició sus estudios de enología en Burdeos y continuó su trayectoria en bodegas icónicas como Romanée-Conti y Vega Sicilia, antes de llegar a bodegas Arzuaga. Con 30 hectáreas de viñedo, que incluyen 30 hectáreas de viñas muy antiguas y 5 hectáreas relativamente jóvenes, cultivan principalmente la variedad Tempranillo, junto con otras variedades locales como Bobal, Garnacha y Albillo, en suelos arenoso-calcáreos a 900 metros de altitud.

Dominio del Águila adopta un enfoque artesanal en todas las etapas, desde la viticultura hasta la elaboración del vino, manteniendo un profundo respeto por la naturaleza y equilibrando tradición y conocimiento. Desde el uso de infusiones de hierbas como la valeriana y la mielenrama en el tratamiento de las viñas hasta la decisión de no clarificar ni filtrar el vino, la bodega se esfuerza por crear vinos ecológicos capaces de envejecer durante períodos prolongados, pero que se pueden disfrutar en cualquier momento. Todos los vinos se elaboran sin despalillar y se pisan en el lagar, siguiendo métodos antiguos. La fermentación maloláctica se lleva a cabo en cubillos de roble de la más alta calidad, y el envejecimiento ocurre en las galerías subterráneas. Picaro del Águila Clarete pasa cerca de 20 meses en cubillos de roble francés.
