Teso la Monja 2019, a red wine from the prestigious Teso la Monja winery in Valdefinjas (Zamora) under the Toro designation of origin, is a wine masterpiece. Coming from a 1,8 hectare vineyard with pre-phylloxera vines planted in glass at 775 meters of altitude and soils with light limestone veins, this wine stands out for its exceptionality. The cultivation of grapes follows rigorous biodynamic principles, respecting minimal intervention to extract the maximum character of the terroir and the grapes. The harvest is carried out manually in small boxes, guaranteeing the selection of the best grapes.
In the winery, the grapes pass through a double selection table and are destemmed by hand, grain by grain, by a team of 55 people. After separating the stems, the grapes are vatted in wooden vats for alcoholic fermentation. During this process, 40% of the grapes are manually trodden three times a day. Malolactic fermentation takes place in an Ovum made of Taransaud French oak wood, and aging takes place in new fine-grained, medium-toasted French oak barrels for 24 months.
