The Philippe Pacalet Ladoix Blanc 2022 is an excellent white wine option made exclusively with Chardonnay grapes by renowned winemaker Philippe Pacalet, located in AOC Volnay, Burgundy region, France. This renowned wine producer in the region is acclaimed for its refined Pinot Noir and Chardonnay. With around 30 different varieties, from village wines to Grand Crus such as Corton-Charlemagne and Charmes-Chambertin, Pacalet has left a distinctive mark on the world of wine.
Although Philippe Pacalet began his career in 1999, he does not own his own vineyards, preferring to rent select plots with exceptional soils. In 2007, he acquired a 19th century winery in Beaune, a true treasure in the heart of the Burgundy wine region.
In its wineries, Pacalet relies on natural yeasts for fermentation, thus maintaining the authenticity of its wines. The red grapes are fermented in whole bunches in wooden vats for several weeks, followed by traditional pigeage on foot. The aging takes place in 228 liter barrels for 15 to 18 months. On the other hand, white grapes are pressed and decanted before fermentation in larger barrels. Philippe Pacalet is known for his minimalist approach, avoiding excessive use of sulfur, only adding a small amount during bottling.
