Los Loros Siete Lomas 2021, an exceptional white wine, fuses the Marmajuelo, Listán, Vijariego, and Gual varieties, carefully made in the renowned El Borujo winery in Santa Cruz de Tenerife, in the Canary Islands. This winery, rooted in the Güímar valley, has evolved from being a century-old producer of bulk wines to becoming a reference in the production of bottled wines, thanks to the drive of the new generation led by the talented winemaker Juan Francisco Fariña Pérez in 1999.
The distinction of Los Loros Siete Lomas comes from the Arafo vineyards, distributed at various altitudes, from 100 to 800 meters. The vines are grown in sandy, clay and stony soils in different plots, following environmentally friendly agricultural practices. The harvest is carried out manually in 15 kg boxes, with destemming and gentle pressing in a pneumatic press.
The must begins its fermentation in steel tanks for a few days, after which it is transferred to 500-liter French barrels, previously used, for 6 months of aging on its own lees. During the first two months, weekly stirring is carried out. Bottling is carried out with a slight clarification using clays, without filtering.
