The grapes used for its production are grown in Pago Cacheiro, a 1.4 hectare vineyard established in 1965, part of the extensive Pazo de Barrantes estate, which extends over 12 hectares and is divided into 8 different plots. This estate is located in the Salnés Valley, the heart of the Rías Baixas, where the granitic soils with superficial layers of sand are ideal for growing Albariño.
The grapes were manually harvested in 18-kilogram boxes on September 14, 2019. After careful selection, the grapes were destemmed and gently and gradually pressed in a pneumatic press. The must was clarified by flotation to enhance its aromatic purity and then fermented at 10°C in 3,000-liter French oak vats for approximately 85 days. This wine was aged for 12 months in 3.000-liter French oak vats, remaining on its lees for three months to gain complexity and texture. It then aged for another 3 months in concrete tanks, achieving balance and pure expression of the terroir.
