Since the late 80s, the winery has adopted biodynamic viticulture practices, following the principle of “natural responses to natural problems,” demonstrating a deep respect for the soil, the vine, and the environment. The winery strives to maintain intentionally low yields to capture the pure essence of each terroir.
The grapes are harvested manually using openwork wooden boxes to ensure the integrity of each bunch. When necessary, meticulous sorting is carried out to ensure quality. In vinification, slow pressing of the whole bunch is used in a pneumatic press. The must from the last press is separated from the free-run must and after a slight settling, the must is transferred to existing or old wine barrels. Alcoholic fermentation and ageing take place in 500-litre oak barrels (which are not new) for 12 to 15 months.
During the ageing process, each decision is made after careful tasting evaluation, complemented by technical analysis. As with all Joseph Drouhin wines, the highest priority is to allow the authentic expression of the terroir and the distinctive character of the vintage.
