Hacienda Monasterio 2021 is an exceptional red wine from the prestigious Hacienda Monasterio Winery, in the renowned Ribera del Duero DO. Led by renowned Danish winemaker Peter Sisseck, creator of Pingus, this wine embodies Spanish oenological excellence. The estate, covering 167 hectares, with 108 dedicated to vine cultivation, is strategically located between Pesquera and Valbuena de Duero, on the world-famous "golden mile" for the exceptional quality of its wines.

The production of this wine is based on the Tempranillo variety, complemented with touches of Cabernet Sauvignon, Merlot and Malbec. The grapes come from single estate vineyards with calcareous soils that provide a unique delicacy and elegance to the wine. Standing out for its ecological commitment, Hacienda Monasterio carries out the manual harvest in plastic boxes to preserve the integrity of the grains.

In the winery, the selection of clusters is carried out on sorting tables before destemming, guaranteeing the established quality. Fermentation, carried out with natural yeasts, is adjusted to temperatures between 28 and 32ºC to obtain a perfect balance. After fermentation, the wine remains in contact with the solid part for two to three weeks, achieving a precise extraction of the tannins.

Malolactic fermentation takes place in 100% French oak barrels (Allier), with racking every three months for a precise separation of wine and lees. After 12 months of aging, the wine is clarified with fresh egg whites to achieve optimal stabilization of the coloring matter. It is usually bottled after 18 months of aging in barrels, although this period can vary depending on the quality of the vintage.
