Dulas del Lagar de la Salud Blanco Fermentado en Barrica 2021 is an exquisite dry white wine produced exclusively with Pedro Ximénez grapes, under the Montilla-Moriles Designation of Origin and at the renowned Lagar de la Salud winery. This wine, named Dulas, celebrates its heritage and an innovative approach to winemaking, reflecting the idea that "health" can be perceived from different angles, symbolizing a continuous cycle of learning and evolution.

The Pago del Lagar de la Salud vineyard in Montilla is characterised by its soils rich in calcareous clays and iron oxide, essential for the cultivation of vineyards that respect biodiversity. Throughout the year, minimal tillage is practiced, starting with restrictive winter pruning and continuing with meticulous care during spring, including clearing and manual adjustments of the canopy, which ensure the development of grapes with an optimal concentration of aromas and polyphenols.

Harvesting is carried out by hand, using small boxes to ensure the integrity of each bunch, which is then meticulously selected and processed in the winery. The process includes careful destemming and gentle pressing, followed by fermentation that begins in stainless steel tanks and is completed in French oak barrels. During the twelve months in barrel, the batonnâge technique is applied to enhance the character and body of the wine.
